Homemade Granola Bars

These granola bars are so simple to make I can even convince my kids to make them sometimes 🙂

Homemade Granola Bars

1/2 c. coconut oil

1/2 cup to 1 cup honey (depending on how sweet you like your food)

2 cups cooking quick cooking oats (I use old-fashioned oats for everything else but not sure how these would turn out, some day I will be brave and try it)

1/2 cup brown rice flour (or anything of that consistency, I’ve used ground flax before, but the flavor is a little strong, sorghum flour is good though)

1/2 teaspoon vanilla

Optional mini-chocolate chips

Optional peanut or almond butter (1/2 cup) (your nut butter should only have two ingredients; nuts and salt)

And for the really adventurous add a scoop of vanilla or chocolate protein powder to your nut butter mix after it has cooked for 2 minutes and stir thoroughly.

 

Stir oats and flour together, set aside. Melt oil, honey and peanut butter (if you want peanut butter in there) in a saucepan, bring to a boil and let simmer for 2 min. Add vanilla to mixture and then pour mixture into the oats and flour. Mix well. Pour into a parchment lined cookie sheet and spread out. If you want chocolate chips in there then sprinkle them on top and gently press them down.  Refrigerate until cool and then cut them into squares/rectangles.
