I got this idea from my co-worker Erin, because really, what busy mom has time to make jam the old fashioned way?? This jam is quick, easy AND healthy.
1 pound chopped fruit of your choice
¼ c. honey (more or less to your desired level of sweetness0
2 tbs. chia seeds
Place fruit in saucepan and heat over medium high heat. Mash fruit with a masher or fork, let come to a boil until it reaches a saucy consistency (about 5 min). Add honey to taste. If your fruit is finished cooking and you want it to be smoother, pour mixture into a blender and blend until smooth. Pour mixture into whatever contain you plan on storing your jam in and stir in chia seeds. Stir thoroughly and let sit for about an hour and half. Place lid on jar and store in fridge.
